these aren't quite sugar cookies, they are bite sized.
these are butter cookies, and will be filled with butter frosting and made into lil sandwiches.

Ahhh, OK, my wife makes a similar cookie that has the halves extruded from a cookie press. They get put together with melted chocolate. Once cooled, one end of the 'sandwich' is again dipped into melted chocolate and then chocolate sprinkles. Very labor intensive cookies to make, IMO.

yea, that sounds intense, these are a similar endeavor, once a year, and that's it!
